When people go to a restaurant they go for many reasons. They go for the food but they also go for the atmosphere, the entertainment, and the music. They go for the entire experience. Independent restaurant owners are at an instant disadvantage when it comes to a national restaurant because we don’t have the strong advertising, the beautiful buildings, the new equipment and furniture that they have.

We don’t normally have the attractive dining rooms or the atmosphere that they have.

We do, however, have personalities and we must learn how to use these personalities to our advantage. The area of enthusiasm is the most important area in our business. Enthusiasm works like magic and it’s free to everyone.

You may think that enthusiasm is silly but I’m here to tell you that enthusiasm controls every aspect of your restaurant. Now, I’m not talking about the type of enthusiasm where you and your employees are bouncing off the walls. I am talking about you and your employees putting some excitement in everything you do. Put a bounce in your step.


Once you have decided to ignite the enthusiasm in your restaurant, have a meeting with your employees and let them know your thinking.

Have your employees, from the cook to the waitress; agree that the next person through your doors will receive the royal treatment.
Greet this customer with a very happy tone and pretend as though you’re happy to be at work today, because work is fun. Smiles should prevail with your crew during the entire process. The meal will be cooked to perfection and be steaming hot and the waitress will fuss over this customer like she is their mother.

Once the customers have finished their meal the cashier will act as though this customer is the most important customer she has ever accepted money from before. When you get your entire crew involved with enthusiasm in this manner it become contagious.
